We recently catered a beautiful Connecticut wedding at Lighthouse Point in New Haven for a lovely couple who requested a large selection of food that commemorated the summer season. We worked closely with them to create a customized menu that catered to their 150+ guests. For the cocktail portion of the wedding reception, we passed numerous hors d’oeuvres, which consisted of Smoked Salmon Canapés, Asparagus & Prosciutto Wraps with Garlic Goat Cheese, Cucumber Cups with Gorgonzola, and Smoked Trout Mousse Canapés, Stuffed Mushrooms, and Bacon & Scallops. We also had a stationary table set up that offered a variety of domestic cheeses, and an assortment of fresh fruits and vegetables, which created a great atmosphere for the guests to mingle with each other.
Once the cocktail hour portion of the wedding reception had finished, the guests settled into The Carousel at Lighthouse Point Park building, which offers an extremely spacious comfortable setting, as well as gorgeous views of New Haven Harbor and Long Island Sound. The Carousel structure was decorated with an assortments of lights and drapes, and also contained personalized ornaments on each of the tables.
For this summer New Haven wedding reception, we served up a buffet style dinner layout separate stations designated. The wedding guests had their choice of a Beef Tenderloin (Pepper Crusted, Garlic Rub, etc.), Veal Marsala with Sautéed Button Mushrooms, Grilled Swordfish Steaks with Peppercorn Glaze, Vegetable Raviolis with Roasted Pepper Coulis, among other side dishes such as Smoked Duck & Black Bean Quesadilla and Beef Tenderloin Brochettes with Horseradish Cream. In addition to our main coarse stations, we also set up a summer themed station featuring blackened chicken breast, blackened shrimp, warm potato salad and Caesar salad. Instead of providing a customary wedding cake, the couple had decided to serve various types of cupcakes for their guests.
