The appetizer and hors d’oeuvres section of your wedding menu is often considered one of the most least stressful areas of the menu that you will need to be concerned with during your Connecticut wedding. Your wedding hors d’oeuvres are typically served during the wedding reception hours of 2pm to 6pm and you want to give your guests the impression that they are eating more food than they actually are. In order to achieve this, we will serve your appetizers and hors d’oeuvres on smaller plates or request that our bartenders add more ice into the drinks, which will create the illusion that they are consuming larger amounts of food and drink. This simple maneuver will give your guests the impression that they are quenched and fulfilled until the point when the main coarse is served during the dinner hour.
You should always try to emulate the style of your wedding in the variety of hors d’oeuvres that you are serving. If you are having a casual style wedding, you can serve cheese puffs, mini-hot dogs, or Swedish meatballs. Asparagus & Prosciutto Wraps with Garlic Goat Cheese
Asparagus wrapped in Prosciutto and herbed Goat Cheese is a delicious and will certainly make a great addition to the hors d’oeuvres menu of your wedding. After trimming the asparagus woody tips, we cook them in salted boiling water for 5 minutes and then plunge into ice bath to shock and stop cooking. We mix the Goat Cheese with salt, pepper, garlic and any fresh minced herbs you may recommend. We then spread over a thin slice of Prosciutto that has been sliced crosswise and Asparagus into a bundle to serve to your guests.
Bacon & Scallops
Bacon is a very popular menu item that always seems to find a way to make it into the majority of our Connecticut wedding menus. We wrap each carefully prepared scallop with a half strip of bacon, and secure it with a wooden toothpick. We will apply some sea salt and freshly ground black pepper and broil the bacon until it has sizzled into its crispy-state.
Smoked Salmon Canapés
One of our long-standing favorite canapé recipes is smoked salmon on little toast rounds. We typically spread the bread with just a bit of cultured butter, then layer on the cold-smoked salmon, crème fraîche or Greek yogurt, and dill or chives. We can also add some arugula leaves, sprouts, or sprigs of mesclun, which could add some color and crunch.
Baked Artichoke Squares
We utilize a very meticulous and tasty recipe when preparing our baked artichoke squares. They have always been a popular item at each of our wedding events and we typically do not have one square left-over. We have had many guests request the recipe, which includes adding fresh mushrooms, celery and garlic and Sauté until celery is tender. We stir in artichoke hearts, green onion, marjoram, oregano and cayenne and then cheeses and eggs.
